Crock-Pot Sloppy Joe’s

  • 1 pound lean ground beef
  • 1 medium-sized onion, finely chopped
  • 1/2 large red bell pepper, seeded and finely chopped
  • 1 large salary rib, finely chopped
  • 1 clove garlic, minced
  • 1, 6 ounce can tomato paste
  • 2 tablespoons cider vinegar, or more if needed
  • 2 tablespoons firmly packed light brown sugar, or more if needed
  • 1 teaspoon paprika
  • 1/2 teaspoon dry mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon chili powder, or to taste
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • 1 teaspoon Worcestershire sauce
  • Dash of hot sauce
  • Dash of cayenne pepper
  • hamburger buns or other soft sandwich rolls for serving

In a large, nonstick skillet over medium-high heat, cook the beef with the opinion, bell pepper, celery, and garlic, stirring to break up the meat. When the meat is cooked through, transfer the meat and vegetables to the slow cooker. Add the remaining sloppy Joe ingredients and stir to combine well. Cover and cook on LOW for 6 – 7 hours

Taste and add more vinegar or sugar, if desired. Serve the meat mixture spooned onto buns.

Tip: Serve inside of Pita bread for an on-the-go meal

Tip: Use as the meat topping on a home-made pizza

Tip: for a knife and fork version, add 1 cup tomato sauce to the beef mixture before cooking.

Tip: you can double this recipe using the same size cooker
